My name is Grahm Gober and I am currently in my 12th grade year at Cherokee High School. I aspire to own my own business or operate in some kind of management position at someone else’s business. Next year I will attend Georgia State University to study for a Film/Video degree. I currently work at a health food store called Ancient Awakenings and have been for over a year now. Prior to my employment I did not have any knowledge about natural or homeopathic methods of healing the body, but I quickly learned.
For my senior project I chose to study an old, but beneficial way of preserving food known as fermentation. I specified my research to focus on the pH level of the water when fermenting to produce Kombucha Tea. At my job I gained experience making the tea, but I did not have any real knowledge past mixing ingredients together. I feel a comparable situation to that of a McDonald’s employee studying the effects of pesticide free grass when feeding the cows we use to get the hamburger meat. I conducted an experiment where I set aside 4 one-gallon jars to be made with the same ingredients expect for the pH level of the water. I let them sit for six weeks to give the S.C.O.B.Y. time to process the ingredients to be turned into the tea. I also read a lot about fermentation and various testimonies form people with a lot of experience fermenting to better understand the nature of the organism.
My product is the fermented Kombucha Tea. This is the end result of fermenting a S.C.O.B.Y. Although, I should say the drink I will be bringing in for my presentation isn’t the actual tea I produced in my experiment because that tea has long been expired. I will also bring in a live S.C.O.B.Y. for the judges to better understand the popular comparison of the organism to a plant or algae. My research paper was a look into the science behind what the organism does when inside the jar. It was a fairly simple experiment so as for any challenges I faced in my research would only result from finding reliable testimonies form other Kombucha makers to help me understand the process.
In terms of relating my project to a career besides the option to make and sell tea or write a book about fermentation there is not any other choices I have. What Kombucha deals with is personal health and the possibly for a community of healthy people to be formed. I would say I gained a new perspective for what personal health means. There is a growing problem we have in the America where we cycle through vaccination, bad food, disease, pills and then back around. I don’t believe it is necessarily a bad system, but having everything to an exact science does not have to work for billions of people who are always changing and all different from one another.
I would like to say that I enjoyed doing my senior project and felt, like any opportunity to learn something new, it was valuable. I would also like to thank the judges for reviewing my project.
